Tasty, appetising, substantial: a veggie burger is the perfect solution that everyone can agree on, vegetarians included. Forget the meat and get ready to enjoy a tasty morsel that looks like a hamburger, but is actually made entirely from vegetables.
Ingredients for 6 veggie burgers:
- 500 g of potatoes
- 1 carrot
- 70 gr of broccoli or any other vegetable of your choice
- 60 gr of cauliflower or any other vegetable of your choice
- 60 g of peas (fresh or frozen)
- 1 egg white
- 20 g of Grana Padano cheese
- 1 pot of caramelised onion dip
Procedure: Wash all the vegetables and steam for around 15 minutes (or boil for 10 minutes). Chop them into small pieces and set aside. Boil the potatoes and then mash them.
Add the parmesan cheese and nutmeg to the potatoes and season with salt. Knead the mixture well and add the vegetables. Add the egg white and mix all the ingredients together to obtain a firm, compact, uniform mixture. Shape the veggie burgers with the appropriate mould and cook them in a pan for a few minutes with a drizzle of oil (or in the oven at 180°C for about 12-15 minutes). Immediately after cooking, season with the caramelised onion dip and serve them still hot.
